Cooking Up a Healthy Memphis for our Hardworking Neighbors

With the help of our supporters, we care for the whole person, and that includes sharing knowledge and skills, providing lifestyle and nutritional education, and so much more with our community.
A Gift for Your Table Tonight: Lemony Summer Pasta
(Ready in under 20 minutes!)
What You Need:
12 oz pasta of your choice
¼ cup olive oil
4 garlic cloves, finely chopped
1 large shallot or 1 small yellow onion, finely chopped
1 cup plain or lemon hummus
1 lemon, zested and juiced
Fresh herbs of your choice, chopped
Toasted sesame seeds, Kosher salt, & fresh ground pepper
How to Make It:
- Cook pasta in a large pot of boiling water until al dente. Reserve 1 cup of the pasta water, then drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add garlic, shallot, and a pinch of salt. Cook until slightly softened (about 2 minutes).
- Add hummus and ½ cup of the reserved pasta water to the skillet. Stir until it becomes a smooth sauce. Stir in lemon zest and juice, then turn heat to low.
- Add the pasta to the pan and toss to coat. Add more reserved water if needed for consistency.
- Season with salt and pepper, top with herbs and sesame seeds, and serve immediately!
